Traditional Ratatouille of eggplant, zucchini, peppers and tomatoes, inspired by Julia Child, served with Spiced Couscous.
Zucchini, Eggplant, Onion, Green Pepper, Tomatoes, Parsley, Aleppo Pepper, Garlic/Lemon Oil.
- Preheat oven to 350°F.
- Cover the oven-safe ratatouille dish in foil and heat for 20-30 minutes until heated through.
- While that’s warming up, transfer the couscous to a pan and set on low-medium heat. Add a splash of water and cover to steam.
- After 1-2 minutes stir the couscous and check that it is warmed through completely.
- Place couscous into a serving dish and prepare to enjoy.
Generously spoon couscous on your heated serving platter and arrange ratatouille on top. Enjoy the fresh flavours of the vegetables.
