Traditional Ratatouille of eggplant, zucchini, peppers and tomatoes, inspired by Julia Child, served with Spiced Couscous.

Ingredients

Zucchini, Eggplant, Onion, Green Pepper, Tomatoes, Parsley, Aleppo Pepper, Garlic/Lemon Oil.

Assembly Instructions

  1. Preheat oven to 350°F.
  2. Cover the oven-safe ratatouille dish in foil and heat for 20-30 minutes until heated through.
  3. While that’s warming up, transfer the couscous to a pan and set on low-medium heat. Add a splash of water and cover to steam.
  4. After 1-2 minutes stir the couscous and check that it is warmed through completely.
  5. Place couscous into a serving dish and prepare to enjoy.

Serving Suggestions

Generously spoon couscous on your heated serving platter and arrange ratatouille on top. Enjoy the fresh flavours of the vegetables.
